Dharwad Omelet

Dharwad is a city situated in North Karnataka, India. During the incessant monsoons, the climate can get really cold and wet. This makes a great dish, is a quick and easy perk me up. Children really enjoy this dish.

Ingredients
Eggs (yolk and whites separated)....................2
Coriander (finely chopped)..........................1 tbsp
Tomato (finely chopped).............................1
Cooking oil or butter or margarine..................1 tsp
Cheddar cheese (grated).............................2 tbsp
Cold water..............................................2 tbsp
Green chilli peppers (finely chopped)..............1 tbsp
Black pepper powder (As per taste)
Salt (As per taste)

Method
Beat egg yolks separately with cold water.
Mix coriander, green chilli peppers and seasonings.
Whisk egg whites separately until light and fluffy.
Preheat oven at 250 degrees Celsius.
Grease a pie dish with butter and pour egg whites and over this the egg yolk mixture.
Bake at 250 degrees Celsius for 10 min.
Sprinkle cheddar cheese and tomato.
Fold the omelet and bake for 5 - 10 min.
Serve with sauce of your choice.
