Pumpkin Chili Mexicana recipe

Pumpkin lends color and nutrients to this creamy Chili Mexicana. Onion, chile peppers, chicken and kidney beans seasoned with cumin and chili powder make a zesty and flavorful dish. Pumpkin is used in Indian cooking extensively. Pumpkin can be cooked in hundreds of ways. Pumpkins are used to make desserts in India. More on these recipes at a later date. Try the following recipe for a cold winter evening. It is sure to keep you warm and cosy.




Ingredients

2 tablespoons oil

1/2 cup chopped onions

1 cup chopped red or green chilli peppers

1 clove garlic, finely chopped

1 pound ground chicken

2 diced tomatoes

1/2 kg Pumpkin

2 tbsps tomato sauce

1/4 kg kidney beans (baked)

4 green chillies chopped

1/2 cup whole corn

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon ground black pepper


Method


1. Heat vegetable oil in large saucepan over medium-high heat.
2. Add onion, bell pepper and garlic; cook, stirring 5 to 7 minutes or until tender. 3. Add turkey; cook until browned. Drain.

4. Add tomatoes with juice, pumpkin, tomato sauce, beans chiles, corn, chili powder, cumin, salt and pepper.
5. Reduce heat to low.
6. Cover; cook, stirring occasionally for 30 minutes.


Serves 6

Spicy Meat Balls

Ingredients

500 gm Minced mutton

115 gm Onions

1 tbsp Coriander leaves paste

1/4 tsp Pepper

2 Eggs

Salt to taste

Fat or oil for frying

Method

Chop onions very finely

Add all the ingredients to minced meat

Make small balls and deep fry in oil till done

Serve hot with mint sauce

Double Ka Meetha

Hyderabad capital city of the Indian state of Andhra Pradesh. Situated in the region of Andhra Pradesh, the city has an estimated population of 6.8 million,making it the 5th most populous metropolis in India. Hyderabad is known for its rich history, culture and architecture representing its unique character as a meeting point for North and South India, and its multilingual culture, both geographically and culturally. Hyderabad is also one of the most developed cities in the country. It is now a hub of information technology, ITES (BPO) and biotechnology. The city is also known for its ancient cuisine which is famous all over India. Double is like a big bu. Hyderabadi's eat it with chicken curry etc during meals. This is a special dish which is prepared with double for all festivals and when the sweet tooth demands. Try it! Its easy and tasty too.

Ingredients
Bread 1 loaf
Sugar 2 kg
Milk1 litre
Cardamom powder 1 tsp
Cashew nuts halved 50 gm
Almonds sliced 50 gm
Raisins 50 gm
Khoya(Cottage cheese) 100 gm
Water 1 1/2 cups
Orange food color pinch
Oil 250 gm
Method

Remove edges of bread slices
Dry slices under fan for 3 hrs
Boil milk and allow to cool till warm. Keep aside
Boil sugar and water to make thin syrup. Keep aside
Deep fry the bread slices to rich brown/red color
Lay the fried slices in a wide open pan
Spread khoya (cottage cheese) evenly over the bread slices
Mix cardamom powder and food color in the milk
Pour over bread slices and allow to soak
Pour sugar syrup over the bread slices
Heat on low flame (with minimum stirring)
Garnish with chopped nuts ,cover and bake for 10 minutes
Serve hot or chilled

InstaChicken

Rushed for time? But want to have chicken? Try this recipe. Its an all time favorite with our children

Ingredients

500 gm - Chicken (boneless and diced small)

1/2 tsp - Ginger paste

1/2 tsp - Garlic paste

Red chilli powder/ pepper (to taste)

Salt (to taste)

1/2 tsp - Lemon juice

Method

Mix chicken pieces, ginger, garlic and spices in a pressure cooker

Cook on high flame for 5 min and thereafter on low flame for another 5 min

Remove from flame

Sprinkle lemon juice and serve

Serves : 4
