Oat Biscuits


3/4 cup sunflower or safflower oil
1 cup date, sugar
3/4 cup honey
1/2 cup milk
2 teaspoons vanilla extract
2 1/2 cups whole-wheat flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 cups rolled oats
1/2 cup raisins
3/4 teaspoon ground cinnamon


1. Preheat oven to 180 degrees Celsius. In a large mixing bowl, beat oil, date sugar, honey, milk, and vanilla until smooth. Add remaining ingredients one at a time and mix well after each addition.

2. With lightly floured hands, roll batter into bowls the size of golf balls. Place on an ungreased biscuit sheet and press down with a spatula upto a 5 mm thickness. Bake for 20 minutes, or until biscuits are lightly browned to the bottom.

Yields 2 1/2 dozen biscuits.
